When you need a simple sweet bite for a gathering, few things are more useful than a recipe built from pantry basics and a single bowl. This mixture comes together quickly with shredded coconut, egg whites, and sweetener, then bakes into neat little morsels with a toasty exterior and tender center. It is especially appealing for low-carb baking because it skips flour entirely while still delivering plenty of texture and satisfying sweetness.
Serve these with coffee, hot tea, or after-dinner espresso for a light dessert tray. They also pair nicely with fresh berries, a spoonful of plain Greek yogurt, or a platter of other small treats if you are setting out a party spread. Because they are naturally easy to portion, they fit right in on cookie platters, brunch buffets, and holiday tables.
Low Carb 3-Ingredient Coconut Macaroons
Servings: 12 macaroons
Ingredients
2 cups unsweetened shredded coconut
2 large egg whites
1/3 cup granulated monk fruit sweetener
Directions
1. Preheat the oven to 325°F and line a foil tray or baking tray with foil if needed for easier cleanup.
2. In a medium bowl, combine the shredded coconut, egg whites, and monk fruit sweetener. Stir thoroughly until the coconut is evenly moistened and the mixture holds together when pressed.
3. Use your hands or a small scoop to press the mixture into small compact mounds on the foil tray, spacing them slightly apart.
4. Bake for 18 to 22 minutes, or until the tops and edges are lightly golden brown.
5. Let the macaroons cool on the tray for several minutes before serving, so they firm up and lift off cleanly.
Variations & Tips
Make them extra neat: If the mixture feels loose, let it rest for 2 to 3 minutes before shaping. The coconut will absorb more moisture, making the mounds easier to press firmly so they bake up with better structure.
Watch the color closely: Coconut can go from pale to deeply toasted rather quickly. Start checking near the 18-minute mark, especially if your oven runs hot or the mounds are small.
Crisper edges: For a slightly firmer exterior, shape the mounds a bit smaller and more compact. More surface area means more browning, which gives you a toastier finish.
Sweeter or less sweet: Monk fruit sweeteners can vary by brand and blend. If yours tastes especially sweet, you may prefer to reduce it slightly next time; if it is mild, a small extra spoonful can help balance the coconut.
Storage tip: Once fully cooled, store the macaroons in an airtight container at room temperature for a day or two, or refrigerate them for longer freshness. A short chill also makes them a bit firmer, which some people prefer for serving on a dessert tray.
