Some recipes earn permanent status because they are easy to throw together, feed a crowd without stress, and somehow taste even more comforting when everyone is gathered around the kitchen or game-day table. This one reminds me of the kind of hearty Midwestern party food that shows up at tailgates, potlucks, and family reunions, where simple ingredients and a slow cooker do all the heavy lifting while you get on with the rest of the day.
Serve it straight from the slow cooker with soft hoagie rolls for sandwiches, or spoon it over creamy polenta, mashed potatoes, or cooked pasta for a heartier plate. It also works well with a side salad, roasted potatoes, or a big tray of chips and pickles if you are setting it out for casual game-day snacking.
Slow Cooker 4-Ingredient Sausage and Peppers
Servings: 6 to 8
Ingredients
2 lb Italian sausage links
3 bell peppers, sliced
1 yellow onion, sliced
1 (24 oz) jar marinara sauce
Directions
1. Add the sliced bell peppers and sliced onion to the bottom of the slow cooker, spreading them out into an even layer.
2. Place the Italian sausage links on top of the vegetables in a single layer.
3. Pour the marinara sauce evenly over the sausage and vegetables, covering everything as much as possible.
4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the sausage is fully cooked and the peppers and onions are very tender.
5. Serve whole sausage links with the peppers, onions, and sauce, or slice the sausage first for easier sandwiches and party serving.
Variations & Tips
Make it sandwich-style: Pile the sausage, peppers, and sauce into toasted hoagie rolls and add a little shredded mozzarella or provolone if you want a melty finish.
Brown for extra flavor: If you have a few extra minutes, brown the sausage in a skillet before adding it to the slow cooker. It is not required, but it gives the links a deeper color and a little more savory flavor.
Use your favorite peppers: Red, green, orange, or yellow bell peppers all work well here. I usually use whatever is on sale, which is exactly the kind of practical shortcut that makes this recipe so weeknight-friendly.
Prep ahead: Slice the peppers and onion the night before and store them in the fridge. In the morning, all you need to do is layer everything into the slow cooker and turn it on.
Keep it warm for parties: Once fully cooked, switch the slow cooker to warm so guests can serve themselves throughout the afternoon. If the sauce thickens too much, stir in a splash of water before serving.
