Southern 4-ingredient cheesy lunchroom squares are the kind of practical, comforting bake that feels right at home at potlucks, holiday snack tables, and weeknight suppers alike. This style of simple baked cheese square has a nostalgic, cafeteria-inspired appeal, relying on a handful of pantry and refrigerator staples to create something rich, savory, and deeply satisfying with very little effort.
Serve these cheesy squares warm as an appetizer, cut into small pieces for a party tray, or in larger portions alongside tomato soup, a crisp green salad, or a bowl of chili. They also pair nicely with pickles, hot sauce, or a spoonful of salsa if you want to balance the richness with a little brightness.
Southern 4-Ingredient Cheesy Lunchroom Squares
Servings: 12 squares
Ingredients
2 cups biscuit baking mix
2 large eggs
1 cup cottage cheese
2 cups shredded cheddar cheese
Directions
1. Preheat the oven to 350°F and lightly grease an 8-inch square or similar small glass baking dish.
2. In a medium mixing bowl, stir together the biscuit baking mix, eggs, cottage cheese, and shredded cheddar until evenly combined into a thick batter.
3. Spread the mixture evenly into the prepared baking dish, smoothing the top so it bakes up level.
4. Bake for 25 to 30 minutes, until puffed, golden brown around the edges, and set in the center.
5. Let the bake cool for 5 to 10 minutes, then cut into squares and serve warm.
Variations & Tips
Sharper Cheese Flavor: Use extra-sharp cheddar if you want a bolder, more savory result. A sharp cheese stands up especially well if you are serving these squares as party food where they may cool slightly before eating.
Texture Tip: Do not overmix the batter. Stir just until the ingredients come together so the squares bake up tender rather than dense.
Make-Ahead Tip: These can be baked a few hours ahead and gently rewarmed before serving. Cut them after they have rested briefly, which helps the squares hold their shape more cleanly.
Add-Ins: If you do not need to keep strictly to four ingredients, a spoonful of sliced green onions, a pinch of black pepper, or a few diced pickled jalapeños can give the casserole a little extra personality without changing its easy character.
