There is something mighty satisfying about turning a humble freezer staple into a warm little dessert that feels fit for an autumn gathering. This easy Halloween treat leans on solid unthawed frozen mini pancakes, candy corn, and melted white chocolate to make a sheet-pan sweet with plenty of seasonal charm and hardly any fuss. It reminds me of the kind of clever shortcut dessert a busy Midwestern home cook would pull together before a church supper or a grandchildren’s movie night, using what was already in the pantry and freezer.
Serve this dessert warm or at room temperature on a big platter with mugs of hot cocoa, apple cider, or coffee. If you want to make it part of a Halloween dessert table, pair it with bowls of pretzels, apple slices, and a scoop of vanilla ice cream for folks who like a hot-and-cold combination.
3-Ingredient Oven Baked Halloween Pancake Candy Bake
Servings: 6
Ingredients
1 bag (about 24 ounces) solid unthawed frozen mini pancakes
1 1/2 cups candy corn
1 1/2 cups white chocolate chips
Directions
1. Preheat your oven to 375°F. Spread the solid unthawed frozen mini pancakes in a single even layer in an oven-safe metal sheet pan.
2. Bake for 10 to 12 minutes, until the pancakes are hot through and just starting to turn lightly golden around the edges.
3. Sprinkle the white chocolate chips evenly over the hot pancakes and return the pan to the oven for 1 to 2 minutes, just until the chips soften. Remove the pan and gently spread or drizzle the melted chocolate over the pancakes.
4. Scatter the candy corn over the top while the chocolate is still warm so it settles in place. Let the dessert stand for 5 minutes before serving, so the topping can set just a touch.
Variations & Tips
Chocolate Swap: If white chocolate is not your favorite, use milk chocolate or dark chocolate chips instead. The look will be a little less candy-corn bright, but the flavor will be deeper and richer.
Crunchy Finish: A handful of Halloween sprinkles or crushed pretzels over the melted chocolate adds a nice little crunch. That salty-sweet contrast is especially welcome if you find candy corn quite sweet on its own.
Best Texture Tip: Do not thaw the mini pancakes first. Putting them in frozen helps them heat evenly without turning soggy, and the edges get a much nicer finish in the oven.
Easy Party Serving: For a buffet table, let the dessert cool a bit more and use a spatula to scoop portions into cupcake liners. It keeps sticky fingers to a minimum and makes the tray look festive and tidy.
