These oven baked lemon drop shortbread bars are the kind of low-effort dessert that feels almost too easy to work, which is exactly why I love them for busy weeks and last-minute get-togethers. Whole lemon drop candies melt right into a simple shortbread-style base, creating bright citrusy pockets and a glossy lemony finish with just a handful of pantry staples. It is a clever shortcut recipe with that old-school bake sale charm, but the flavor lands somewhere between buttery shortbread and lemon candy.
Serve these bars slightly chilled or at room temperature with coffee, hot tea, or a cold glass of milk. For a simple dessert plate, pair them with fresh berries or a little dollop of whipped cream to balance the sweet-tart lemon flavor. They also fit nicely onto a cookie tray for showers, potlucks, and holiday tins when you want something a little different from the usual brownies or sugar bars.
5-Ingredient Lemon Drop Shortbread Bars
Servings: 16 bars
Ingredients
1 cup unsalted butter, softened
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 teaspoon salt
20 whole unwrapped lemon drop hard candies
Directions
1. Preheat the oven to 325°F and lightly grease or line an oven-safe metal sheet pan or 8x8-inch metal baking pan with parchment for easy removal.
2. In a large bowl, mix the softened butter, flour, sugar, and salt until a thick, crumbly dough forms. Keep mixing just until the dough starts holding together when pressed.
3. Press the dough evenly into the prepared pan, making a smooth layer all the way to the corners. Arrange the whole unwrapped lemon drop candies evenly over the top, pressing them in just slightly.
4. Bake for 28 to 35 minutes, until the edges are lightly golden and the candies have melted into glossy lemony pools across the surface. Let the bars cool completely in the pan so the candy layer can firm up before slicing.
5. Lift out the slab if using parchment, then cut into 16 bars with a sharp knife. For the cleanest slices, chill the pan for 20 to 30 minutes before cutting and serving.
Variations & Tips
Use parchment for easier cleanup: Melted hard candy can stick once it cools, so a parchment sling makes it much easier to lift the bars out neatly and slice them without fighting the pan.
Watch the candy closely: Ovens vary, and lemon drops can go from perfectly melted to too dark around the edges pretty quickly. Start checking near the 28-minute mark, especially if your pan is thin or dark metal.
For a stronger lemon flavor: If you have it on hand and do not mind technically adding a sixth ingredient, a little finely grated lemon zest in the dough gives these bars a fresher citrus flavor that tastes less candy-like and more bakery-style.
Try a different hard candy: This same method works with other fruit-flavored hard candies for a fun twist. Citrus candies tend to melt especially nicely and keep the shortbread from feeling too sweet.
