Low Carb 4-Ingredient Salami Ashcroft Crisps
Servings: 6
Ingredients
24 thin salami slices
1 cup finely shredded parmesan cheese
2 tablespoons softened cream cheese
1 teaspoon Italian seasoning
Directions
1. Preheat the oven to 400°F and line a baking sheet or muffin tin with parchment paper if needed for easier cleanup.
2. In a small bowl, stir together the softened cream cheese and Italian seasoning until well combined.
3. Arrange the salami slices on the prepared baking sheet, leaving a little space between them, and top each slice with a small sprinkle of parmesan.
4. Add a tiny dab of the seasoned cream cheese to the center of each slice, then finish with a little more parmesan on top.
5. Bake for 8 to 10 minutes, or until the edges are crisp and the parmesan is deeply golden and lacy underneath.
6. Let the crisps cool for 2 to 3 minutes so they firm up, then lift them carefully with a spatula and transfer to a serving platter.
Variations & Tips
For picky eaters: Leave out the Italian seasoning and make the cream cheese plain for a milder flavor. Kids and cautious snackers often like the simple salty-cheesy version best.
Extra crispy tip: If your salami slices are a little thick, bake them an extra minute or two and let them rest briefly on the pan before moving them. That short cooling time helps the cheese set and gives the crisps a better crunch.
Spicy version: Add a pinch of red pepper flakes to the cream cheese mixture or use spicy salami for a little kick. This is a nice option if you are serving adults who like bolder snack-board flavors.
Cheese swap: Parmesan gives the crisps that lacy browned edge, but a spoonful of finely shredded asiago can work too. Just use a hard cheese so the crisps stay crisp instead of turning soft.
Make-ahead tip: These are best the day they are made, but you can mix the cream cheese filling ahead of time and keep it chilled. Then all you have to do is assemble and bake right before serving.
