This 4-ingredient broccoli rice casserole is the kind of practical, comforting stovetop supper that has been passed around family kitchens for decades. It leans on a short list of affordable ingredients, with Velveeta providing the creamy texture and savory richness that turns plain rice and broccoli into a cozy one-pot meal. If you need a nostalgic side dish or a simple meatless main for a busy night, this recipe delivers familiar flavor with almost no fuss.
Serve this casserole alongside baked ham, roast chicken, pork chops, or meatloaf if you want it to play the role of a hearty side. It also works well as a simple main dish with a crisp green salad, sliced tomatoes, or a little hot sauce at the table to balance the richness. For potlucks and casual family dinners, warm dinner rolls and iced tea fit right in.
4-Ingredient Broccoli Rice Casserole
Servings: 6
Ingredients
2 cups cooked white rice
4 cups frozen broccoli florets
8 ounces Velveeta, cut into cubes
1/2 cup milk
Directions
1. Add the cooked rice, frozen broccoli, Velveeta cubes, and milk to a large pot or deep skillet over medium-low heat.
2. Cover and cook, stirring occasionally, until the broccoli is heated through and tender and the cheese has melted into a smooth sauce, about 10 to 12 minutes.
3. Stir well to break up the broccoli into bite-size pieces and evenly coat the rice. If the mixture seems too thick, add a splash more milk.
4. Taste and serve hot straight from the pot, or spoon into a serving bowl for the table.
Variations & Tips
Add onion: For a little more savory depth, cook 1/4 cup finely chopped onion in the pot with a dab of butter before adding the other ingredients. It gives the casserole a more old-fashioned, cooked-from-scratch flavor.
Use fresh broccoli: If you prefer fresh broccoli, cut it into small florets and steam or microwave it briefly first so it softens at the same rate as the cheese melts. This keeps the rice from overcooking while you wait for the broccoli to become tender.
Make it heartier: Stir in cooked diced chicken, browned sausage, or even a can of drained tuna if you want to turn this into a fuller main dish. Since the base is rich and creamy, a little extra protein goes a long way.
Adjust the texture: This casserole thickens quickly as it sits. If you're making it ahead or reheating leftovers, loosen it with a splash of milk over low heat and stir until creamy again.
