When the wind turns sharp and the house needs supper without a fuss, this little bake is the sort of thing that earns a permanent place in the recipe box. With only four simple ingredients, it comes together the way many Midwestern casseroles do: practical, filling, and easy to get ready ahead so the evening feels calmer. The top bakes up glossy and browned around the edges, and what comes out of the oven is warm, savory comfort with hardly any tending at all.
This bake is plenty satisfying on its own, but I like to set it out with buttered green beans, a crisp lettuce salad, or simple roasted carrots for a bit of freshness beside the rich, caramelized dish. A pan of warm biscuits or thick slices of bread goes nicely too, especially for catching any savory juices on the plate. If you're serving it on a cold night, hot applesauce or a spoonful of cranberry relish makes a fine old-fashioned pairing.
4-Ingredient Goblin's Grub Bake
Servings: 6
Ingredients
1 pound ground beef
1 (24 ounce) bag frozen tater tots
1 (10.5 ounce) can condensed cream of mushroom soup
2 cups shredded cheddar cheese
Directions
1. Preheat the oven to 375°F and lightly grease a medium ceramic baking dish.
2. In a skillet over medium heat, cook the ground beef until browned and crumbly, then drain off any excess grease.
3. Stir the condensed cream of mushroom soup into the cooked beef until everything is evenly coated, then spread the mixture into the prepared baking dish.
4. Sprinkle the shredded cheddar cheese evenly over the beef mixture, then arrange the frozen tater tots in a single layer across the top.
5. Bake for 40 to 45 minutes, until the top is deeply golden, the edges are bubbling, and the dish is hot through the center. Let it rest 5 minutes before serving.
Variations & Tips
Make-ahead tip: You can brown the beef and mix it with the soup earlier in the day, spread it in the dish, and keep it covered in the refrigerator. Add the cheese and tater tots just before baking so the top stays crisp.
Cheese swap: If cheddar is not what you have on hand, Colby, Monterey Jack, or a simple shredded blend will all melt nicely and give you a slightly different flavor while keeping the recipe just as easy.
Heartier version: A layer of drained canned corn or green beans tucked between the beef mixture and the cheese makes this stretch a little farther and turns it into a fuller one-pan supper.
Crispier top: For extra color and crunch, bake the dish on the upper oven rack for the last 10 minutes. If needed, give it a minute or two under the broiler, watching closely so the top browns but does not burn.
