These oven baked cookie butter bars are the sort of low-effort, high-reward dessert that earns a permanent place in a busy home baker’s rotation. Whole chocolate chip cookies form the base, then a few pantry staples melt together into a rich, sliceable bar with a soft center and plenty of nostalgic cookie flavor. It’s an especially handy recipe when you want something crowd-pleasing for potlucks, school events, or casual weekend dinners without mixing a traditional batter from scratch.
Serve these bars slightly warm or fully cooled, cut into neat squares, with cold milk, coffee, or a scoop of vanilla ice cream. For a balanced dessert tray, pair them with fresh strawberries or sliced bananas, since a little fruit offsets the sweetness nicely and makes the plate feel complete.
Oven Baked 5-Ingredient Chocolate Chip Cookie Butter Bars
Servings: 12
Ingredients
24 whole chocolate chip cookies
1 cup cookie butter
1 can sweetened condensed milk (14 ounces)
1 cup semisweet chocolate chips
4 tablespoons unsalted butter, melted
Directions
1. Preheat the oven to 350°F and lightly grease a clear glass 9x13 baking dish.
2. Arrange the whole chocolate chip cookies in an even layer across the bottom of the dish, fitting them closely together.
3. In a microwave-safe bowl, combine the cookie butter, sweetened condensed milk, and melted butter. Heat in short bursts if needed and stir until smooth and pourable.
4. Pour the cookie butter mixture evenly over the cookies, using a spatula to spread it into the gaps. Sprinkle the chocolate chips evenly over the top.
5. Bake for 22 to 28 minutes, until the edges are bubbling and lightly golden and the chocolate chips are melted.
6. Cool the bars for at least 30 minutes before slicing so they set properly. Cut into 12 squares and serve.
Variations & Tips
Extra Chocolate: For a deeper chocolate flavor, use a mix of semisweet and dark chocolate chips. A small handful scattered over the bars right after baking will soften beautifully and make the top look even more finished.
Crunchy Version: If you like a little texture contrast, stir a few tablespoons of chopped toasted pecans into the cookie butter mixture before pouring it over the cookies. The nuts cut the sweetness and add a pleasant bakery-style bite.
Clean Slices: For the neatest bars, let the pan cool completely, then chill it for 20 to 30 minutes before cutting. A sharp knife wiped clean between slices will keep the layers distinct.
Make-Ahead Tip: These bars keep well covered at room temperature for about 2 days or in the refrigerator for up to 5 days. If chilled, let them sit out briefly before serving so the cookie butter layer softens a bit.
