These oven baked roast beef and goat cheese crescent moons are the sort of easy, low-effort appetizer that feels far more polished than the ingredient list suggests. Using refrigerated crescent dough keeps the prep simple, while savory roast beef and tangy goat cheese create a rich, satisfying filling that works beautifully for potlucks, game days, casual holiday gatherings, or an easy weeknight snack tray.
Serve these warm with a crisp green salad, a bowl of tomato soup, or a platter of pickles, olives, and cut vegetables for contrast. They also pair nicely with mustard, horseradish sauce, or a simple onion jam on the side, and if you're setting out a fall appetizer spread, they fit right in alongside apple slices, grapes, and sparkling cider.
Oven Baked 3-Ingredient Roast Beef and Goat Cheese Crescent Moons
Servings: 8 crescent moons
Ingredients
1 tube refrigerated crescent roll dough, 8-count
8 thin slices deli roast beef
4 ounces goat cheese, divided into 8 portions
Directions
1. Preheat the oven to 375 degrees Fahrenheit and line a baking sheet with foil or parchment for easy cleanup.
2. Unroll the crescent dough and separate it into 8 triangles, spacing them slightly apart on your work surface.
3. Place 1 slice of roast beef on each dough triangle, folding the meat as needed to fit, then top each with a portion of goat cheese near the wide end.
4. Roll up each triangle from the wide end to the point, tucking the filling inside, and curve the ends slightly to form crescent moon shapes.
5. Transfer the crescents to the prepared baking sheet and bake for 11 to 14 minutes, or until puffed and golden brown with a little cheese peeking through.
6. Let them cool for 3 to 5 minutes before serving so the filling can settle slightly and the pastry stays crisp.
Variations & Tips
Add a spread: A thin swipe of Dijon mustard or horseradish sauce under the roast beef adds extra sharpness and makes these taste a bit more like a deli sandwich wrapped in pastry.
Use different cheese: If goat cheese is not your favorite, try softened cream cheese, Boursin, or a small slice of provolone for a milder flavor and a slightly different texture.
Keep the filling contained: Avoid overfilling the dough, and place the cheese closer to the center so it does not melt out too much during baking. If a little does escape, that crispy bit is still delicious.
Make-ahead tip: Assemble the crescents a few hours ahead, refrigerate them on the baking sheet, and bake just before serving for the best texture and the freshest flavor.
