There is a reason simple slow cooker dinners never go out of style, and this 3-Ingredient Crock Pot Cube Steak and Gravy is exactly the kind of recipe that earns a permanent spot in the weeknight rotation. Cube steak turns tender as it cooks low and slow in a blanket of condensed cream of mushroom soup and onion soup mix, creating a rich gravy with almost no effort. It has that old-school, Sunday-supper feel that makes the kitchen smell comforting long before dinner hits the table, which is especially nice on a busy day when you still want something hearty.
This dish is made for spooning over mashed potatoes, white rice, or buttered egg noodles so none of that savory gravy goes to waste. For sides, green beans, corn, roasted carrots, or a simple side salad all work well and keep the meal balanced. If you want to lean into the cozy factor, add warm dinner rolls or a piece of crusty bread for mopping up the extra sauce.
3-Ingredient Crock Pot Cube Steak and Gravy
Servings: 4 to 6
Ingredients
1 1/2 to 2 pounds cube steak
1 packet dry onion soup mix
2 cans condensed cream of mushroom soup
Directions
1. Lightly coat the inside of the slow cooker insert with nonstick spray if desired, then place the cube steaks in the bottom in an even layer, overlapping slightly if needed.
2. Sprinkle the dry onion soup mix evenly over the steaks so the seasoning is distributed across the surface.
3. Spoon the condensed cream of mushroom soup over the top, spreading it as evenly as you can to cover the meat.
4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the cube steak is very tender and the gravy is hot and smooth.
5. Gently stir the gravy, then serve the cube steak hot with the gravy spooned over mashed potatoes, rice, or noodles.
Variations & Tips
Use cream of chicken: If mushroom is not a family favorite, condensed cream of chicken works well too. The gravy will be a little lighter in flavor but still rich and comforting.
Thinner gravy: For a looser sauce, stir in about 1/2 cup water or low-sodium beef broth before cooking. This is especially helpful if you plan to serve it over rice or noodles.
Add mushrooms: If you want a little more texture, add a handful of sliced fresh mushrooms on top before cooking. They blend right into the gravy and make the dish feel a little more homemade.
Make-ahead tip: This is an easy one to assemble the night before. Add everything to the slow cooker insert, cover, and refrigerate if your insert is refrigerator-safe, then start cooking the next day.
Storage and reheating: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of water or broth if the gravy thickens too much.
