These oven baked fig newton crumble bars are the kind of easy church-supper dessert that feels like a little kitchen shortcut passed from one neighbor to another. Using whole fig newton cookies as the base gives you a tender, jammy layer without any fuss, and with just a handful of pantry staples stirred and sprinkled over the top, you end up with a warm, buttery bar that tastes far more involved than it really is. It is a thrifty, practical sort of sweet, and that has always been the backbone of good Midwestern baking.
Serve these bars slightly warm or fully cooled, cut into generous squares, with coffee, cold milk, or a scoop of vanilla ice cream if you want to dress them up for company. They also sit nicely on a dessert tray beside fresh fruit, and for potlucks or holiday tables, a little dollop of whipped cream makes them look especially inviting.
Oven Baked 5-Ingredient Fig Newton Crumble Bars
Servings: 12 bars
Ingredients
1 (10-ounce) package whole fig newton cookies
1 box yellow cake mix (about 15.25 ounces)
1 cup unsalted butter, melted
1 cup chopped pecans
1 teaspoon ground cinnamon
Directions
1. Preheat your oven to 350°F and lightly grease a clear glass 9x13 baking dish.
2. Arrange the whole fig newton cookies in a single even layer across the bottom of the baking dish, placing them close together to cover the surface.
3. In a medium bowl, stir together the dry cake mix, chopped pecans, and cinnamon until well combined. Pour in the melted butter and mix with a fork until the mixture forms moist crumbs.
4. Sprinkle the crumb mixture evenly over the fig newton cookies, covering them from edge to edge without pressing down too firmly.
5. Bake for 28 to 32 minutes, until the top is golden brown and the edges are bubbling just a little. Let the bars cool in the dish for at least 30 minutes before slicing into squares.
Variations & Tips
Walnut Version: If pecans are not what you have in the pantry, chopped walnuts make a fine substitute and bring a slightly heartier flavor that pairs beautifully with the figs.
Extra Spice: Add a pinch of nutmeg or a little ground ginger along with the cinnamon for a warmer spice note, especially nice in the cooler months.
For Cleaner Slices: Let the bars cool completely before cutting, and chill them for 20 to 30 minutes if you want especially tidy squares for a party tray or bake sale table.
Serving It Warm: These bars are awfully good while still a bit warm, with the fig centers soft and the topping buttery. A scoop of vanilla ice cream on top turns a simple pan dessert into something company-worthy.
