There is a reason a pot of pinto beans and ham hock has stayed a favorite across generations: it is simple, thrifty, and deeply comforting. This stovetop version leans on just three ingredients to make a rich, savory pot of beans that tastes like it simmered all day with care. As the beans soften and the ham hock flavors the broth, the whole kitchen fills with that old-fashioned Sunday supper smell that makes a plain meal feel extra special.
Serve these pinto beans in big bowls with warm cornbread, sliced raw onion, chow-chow, or a pan of skillet potatoes on the side. They also pair beautifully with collard greens, a simple cabbage slaw, or a wedge of buttered bread for soaking up the broth. If you want to stretch the meal for a hungry family, spoon the beans over steamed rice.
3-Ingredient Pinto Beans and Ham Hock
Servings: 6
Ingredients
1 pound dry pinto beans
1 smoked ham hock
1 medium white onion, chopped
8 cups water, or enough to cover beans by 2 inches
Salt and black pepper to taste, optional for serving
Directions
1. Sort through the dry pinto beans and discard any stones or shriveled beans. Rinse the beans well under cool water.
2. Place the rinsed beans in a large heavy pot. Add the ham hock, chopped onion, and enough water to cover everything by about 2 inches.
3. Bring the pot to a gentle boil over medium-high heat, then reduce the heat to low. Cover loosely and simmer for 2 1/2 to 3 hours, stirring now and then, until the beans are tender and the ham hock is very soft.
4. Remove the ham hock from the pot and let it cool just enough to handle. Pull off any meat, discard the skin, bone, and excess fat, then stir the meat back into the beans.
5. Taste the beans and add salt and black pepper if needed. Simmer uncovered for 10 to 15 minutes more if you want a thicker, creamier broth, then serve hot.
Variations & Tips
For creamier beans: Lightly mash a spoonful or two of the cooked beans against the side of the pot and stir them back in. That little trick thickens the broth without adding anything extra.
For picky eaters: Chop the onion very fine so it almost melts into the broth as the beans cook. If someone at your table does not like pieces of onion or larger bits of ham, you can remove those before serving and still keep all that wonderful flavor.
For soaking ahead: If you like, soak the beans overnight in plenty of water, then drain before cooking. They may cook a bit faster the next day, which can be handy on a busy weeknight.
For seasoning carefully: Ham hocks can be quite salty, so wait until the beans are fully cooked before adding any salt. A little black pepper at the end is often all they need.
For leftovers: These beans reheat beautifully and often taste even better the next day. Add a splash of water when warming them on the stove so the broth loosens back up nicely.
