Southern 3-ingredient cheesy cornbread bites are the kind of simple comfort food that disappears fast at potlucks, holiday tables, and weeknight suppers. With a box of cornbread mix, plenty of cheese, and a little cream-style corn to keep everything tender and moist, these bites bake up with that cozy Southern-style flavor people love, while staying easy enough to throw together at the last minute.
Serve these warm alongside chili, barbecue, ham, fried chicken, or a big pot of soup or beans. They also fit right in on a party table with dips, pickles, and a simple green salad, and they are especially nice when cut into small squares for snacking, brunch spreads, or family gatherings where everyone wants just one more bite.
Southern 3-Ingredient Cheesy Cornbread Bites
Servings: 12
Ingredients
1 box (8.5 ounces) cornbread mix
1 can (14.75 ounces) cream-style corn
1 1/2 cups shredded cheddar cheese
Directions
1. Preheat the oven to 375°F and lightly grease an 8-inch square baking dish or small glass casserole dish.
2. In a medium mixing bowl, stir together the cornbread mix, cream-style corn, and shredded cheddar cheese until everything is evenly combined.
3. Spread the mixture evenly into the prepared baking dish, smoothing the top so it bakes up into even bite-size squares.
4. Bake for 25 to 30 minutes, or until the top is golden brown, the edges are lightly crisp, and the center is set.
5. Let the cornbread cool for about 10 minutes, then cut into small squares and serve warm.
Variations & Tips
For extra buttery edges: Grease the baking dish generously before adding the batter. That little bit of extra fat helps the outside turn beautifully crisp and gives the bites that classic potluck-pan flavor everyone reaches for first.
For picky eaters: Use a mild cheddar instead of a sharp one so the cheese flavor stays gentle and kid-friendly. You can also cut the baked cornbread into very small squares and serve them with supper like a bread basket.
To make it party-ready: Bake, cool slightly, and cut into smaller two-bite pieces for appetizer trays. A small spatula makes it easier to lift the squares out neatly if you are serving them at a gathering.
To change the cheese: Try Monterey Jack, Colby, or a Mexican-style blend if that is what you have on hand. Each one melts a little differently, but they all make a tender, savory cornbread bite.
Storage tip: Leftovers can be covered and kept in the refrigerator for up to 3 days. Reheat in the oven or air fryer for the best texture, since the edges crisp back up nicely that way.
