When the air turns sharp and the porch light is ready for little ghosts and goblins, I like a supper that can be tucked into the oven early and left to do its quiet work. This 4-Ingredient Monster Mash Casserole is the sort of thrifty, cozy dish Midwestern home cooks have leaned on for generations: simple pantry staples, hearty flavor, and a bubbling pan that feeds everybody without fuss. It is humble food, the kind that fills the kitchen with a savory smell and makes an ordinary fall evening feel downright special.
Serve this casserole with buttered green beans, a crisp apple slaw, or a simple tossed salad to brighten up all that rich, creamy goodness. If you are feeding a hungry crowd before a night of trick-or-treating, warm dinner rolls, roasted carrots, or a little dish of cranberry sauce on the side make the meal feel complete without adding much work.
4-Ingredient Monster Mash Casserole
Servings: 6
Ingredients
1 pound ground beef
1 (10.5 ounce) can condensed cream of mushroom soup
1 (32 ounce) bag frozen tater tots
2 cups shredded cheddar cheese
Directions
1. Preheat the oven to 375°F and lightly grease a 9x13-inch glass casserole dish.
2. In a large skillet over medium heat, cook the ground beef until fully browned, breaking it up with a spoon as it cooks. Drain off any excess grease.
3. Stir the condensed cream of mushroom soup into the cooked beef until everything is evenly combined and creamy.
4. Spread the beef mixture into the prepared casserole dish, then sprinkle 1 cup of the cheddar cheese over the top.
5. Arrange the frozen tater tots in an even layer across the top and bake for 35 to 40 minutes, until the tots are crisp and golden.
6. Remove the casserole from the oven, sprinkle on the remaining 1 cup cheddar cheese, and return it to the oven for 5 minutes, until the cheese is melted. Let it rest for 10 minutes before serving.
Variations & Tips
Soup Swap: If cream of mushroom is not a family favorite, cream of chicken or cream of celery works just as nicely and keeps the same easy, comforting character.
Extra Flavor: A little onion powder, black pepper, or garlic powder stirred into the beef can give this casserole a fuller flavor, especially if you keep a well-stocked spice cabinet.
Make-Ahead Tip: You can assemble the beef, soup, and first layer of cheese in the dish a few hours ahead, cover it, and keep it in the refrigerator. Wait to add the tater tots until just before baking so they stay nice and crisp.
Cheese Change: Colby jack, pepper jack, or a sharp cheddar all work well here. A sharper cheese gives the casserole a little more backbone against the creamy filling.
Crowd-Friendly Tip: For a Halloween supper table, keep the casserole warm for a short while after baking and serve it with a big spoon right from the dish. It is the kind of hearty meal that gets everybody fed before boots, coats, and candy buckets come out.
