There is something mighty comforting about a casserole that asks so little and gives so much back, and this 3-Ingredient Crock Pot Hamburger Hashbrown Casserole is just that kind of supper. It is the sort of plain, practical Midwestern meal that busy farm families have leaned on for generations: a little meat, a little potato, and something creamy to bring it all together. By the time it has slow-cooked into a hot, hearty dish, the whole kitchen smells like an easy Sunday when nobody is in a hurry.
This casserole is filling enough to stand on its own, but I like to serve it with simple green beans, buttered corn, or a crisp little salad to lighten the plate. Warm dinner rolls are always welcome for scooping up the creamy edges, and if you are feeding a crowd, a dish of applesauce or sliced tomatoes on the side makes it feel like a true old-fashioned family supper.
3-Ingredient Crock Pot Hamburger Hashbrown Casserole
Servings: 6
Ingredients
1 pound ground beef
1 bag (about 30 to 32 ounces) frozen shredded hash browns
2 cans (10.5 ounces each) condensed cream of mushroom soup
Directions
1. Lightly grease the inside of your slow cooker. Press the ground beef into the bottom of the cooker in an even layer.
2. Spread the frozen hash browns evenly over the ground beef.
3. Spoon the condensed cream of mushroom soup over the top and spread it as evenly as you can to cover the hash browns.
4. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the beef is fully cooked and the hash browns are tender. Stir before serving if you want a more blended casserole.
Variations & Tips
Cheesy version: If you want to stretch beyond the three basics, a good handful of shredded cheddar over the top in the last 20 minutes makes this casserole extra cozy and gives it that supper-table look folks love.
Soup swap: Cream of chicken or cream of celery both work nicely here if that is what you have in the pantry. Each one changes the flavor just a little, but the casserole stays creamy and dependable.
Season it up: Since this is a very simple recipe, do not be shy about adding a little salt, black pepper, onion powder, or garlic powder if your family likes a bit more flavor.
For easier serving: Let the casserole rest with the lid off for about 10 minutes before spooning it onto plates. That short rest helps it settle and makes neater servings.
Food safety tip: Be sure the ground beef is fully cooked before serving. If your slow cooker tends to run cool, check that the beef is no longer pink and the casserole is piping hot all the way through.
