These oven baked 3-ingredient corned beef and baby Swiss crescent pillows are the kind of easy appetizer that saves me on busy weekends when I still want something warm and homemade for game day. They have that classic deli-style flavor combination tucked into buttery crescent dough, and they come together fast with just a handful of store-bought ingredients, which is probably why this recipe became a repeat in my kitchen after a neighbor passed it along.
Serve these warm from the oven with a side of whole grain mustard, Thousand Island dressing, or a simple creamy dip for dunking. They also fit right in on an appetizer spread with potato chips, crunchy pickles, a crisp veggie tray, or a light slaw, and they pair especially well with sparkling water, soda, or cold beer for a relaxed football Sunday snack table.
Oven Baked 3-Ingredient Corned Beef and Baby Swiss Crescent Pillows
Servings: 8 crescent pillows
Ingredients
1 tube refrigerated crescent roll dough (8-count)
8 ounces shredded or chopped cooked corned beef
4 slices baby Swiss cheese, cut in half
Directions
1. Preheat the oven to 375°F and line a baking sheet with foil or parchment paper for easy cleanup.
2. Unroll the crescent dough and separate it into 8 triangles on a clean work surface.
3. Divide the corned beef evenly among the triangles, placing it near the wide end of each piece of dough. Top each portion with half a slice of baby Swiss cheese.
4. Fold and roll the dough around the filling, pinching the seams closed so the corned beef and cheese stay tucked inside. Arrange the pillows seam-side down on the prepared baking sheet.
5. Bake for 11 to 14 minutes, or until the crescent pillows are puffed and deep golden brown.
6. Let them cool for 3 to 5 minutes before serving so the melted cheese can settle slightly. Serve warm.
Variations & Tips
Add a dip: If you want to lean into that deli-style flavor, serve these with Thousand Island dressing or spicy brown mustard. It makes them feel a little more special without adding any extra work while you cook.
Keep the filling dry: Make sure your corned beef is not overly wet before adding it to the dough. A drier filling helps the crescent pillows bake up flaky instead of getting soggy in the center.
Make them smaller: For party platters, you can cut each dough triangle in half and use a smaller amount of filling to create bite-size versions. Just start checking the oven a few minutes early since smaller pieces bake faster.
Prep ahead: You can assemble the pillows a few hours in advance, cover them, and refrigerate until baking time. This is one of my favorite tricks when I am trying to get ahead before guests come over or before the game starts.
