There is something mighty satisfying about a supper that asks very little of the cook and still brings everybody hurrying to the table. This kind of slow cooker meal fits right into a busy weekday, with plain pantry staples and a few refrigerator basics turning into a warm, hearty bowl that feels a good bit cozier than the effort would suggest. It has that practical, homespun spirit so many of us grew up with, where a clever shortcut and a dependable crock could carry a family clean through the evening.
Because this is a rich and creamy noodle supper, it pairs nicely with something simple and fresh on the side. A bowl of buttered green beans, steamed broccoli, sweet corn, or a crisp cucumber salad helps balance the richness, and if you want to stretch the meal a little farther, warm dinner rolls or flaky biscuits are just right for mopping up every last bit of the sauce.
Slow Cooker 5-Ingredient Creamy Ranch Chicken Ramen
Servings: 6
Ingredients
3 packs dry ramen noodles, seasoning packets discarded
1 1/2 pounds boneless skinless chicken breasts
1 block (8 ounces) cream cheese
1 packet dry ranch seasoning
3 cups chicken broth
Directions
1. Place the chicken breasts in the bottom of a black slow cooker insert in an even layer.
2. Sprinkle the ranch seasoning evenly over the chicken, then pour in the chicken broth. Set the block of cream cheese on top.
3. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the chicken is very tender and cooked through.
4. Remove the chicken and shred it with two forks. Stir the cream cheese and broth together in the slow cooker until smooth, then return the shredded chicken to the pot.
5. Break the ramen noodles into large pieces if you like, then press them down into the hot creamy liquid. Cover and cook on high for 15 to 20 minutes, just until the noodles are tender.
6. Stir well and serve hot once the noodles are softened and coated in the creamy ranch sauce.
Variations & Tips
Add a vegetable: Stir in a couple handfuls of baby spinach, thawed peas, or a little steamed broccoli right at the end for color and a bit of freshness. Since the base is mild and creamy, vegetables tuck in nicely without changing the easy character of the dish.
Use thighs instead: Boneless skinless chicken thighs work beautifully here and stay especially juicy in the slow cooker. If that is what you have on hand, use about the same weight and cook until the meat shreds easily.
Watch the noodles closely: Ramen can go from tender to overly soft in a hurry, so start checking a little early. Different slow cookers run at different temperatures, and giving the noodles just enough time will keep the texture pleasant and hearty.
Loosen the sauce if needed: If the finished dish thickens more than you like, stir in a splash of warm chicken broth before serving. That little bit will relax the sauce and help the noodles stay silky instead of tight.
Save leftovers carefully: Leftovers can be refrigerated for up to 3 days, though the noodles will continue to soften as they sit. For the best texture, reheat gently with a small splash of broth or milk to bring the creamy sauce back together.
