Some recipes earn their place at the table because they stretch a handful of pantry staples into something cozy, shareable, and unexpectedly memorable. This old-fashioned casserole-style favorite has roots in the era of creamy baked salads and potluck suppers, where convenience ingredients and a bit of texture on top made a dish feel special. Using a slow cooker makes it especially easy for busy days, church gatherings, game nights, or reunions when you want a warm main dish that holds well and feeds a crowd.
Serve it with a simple green salad, sliced tomatoes, fresh fruit, or a crisp vegetable tray to balance the richness. It’s also good alongside butter crackers, croissants, toasted sandwich rolls, or baked potatoes if you want to make the meal more substantial. For drinks, iced tea or lemonade fit the casual comfort-food feel nicely.
Slow Cooker 5-Ingredient Hot Chicken Salad
Servings: 6 to 8
Ingredients
4 cups shredded rotisserie chicken
1 can cream of chicken soup
3/4 cup mayonnaise
1 1/2 cups diced celery
2 cups crushed potato chips
Directions
1. Lightly coat the inside of the slow cooker insert with nonstick spray or a thin film of oil if desired for easier cleanup.
2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, mayonnaise, and diced celery. Stir until the mixture is evenly coated and well blended.
3. Transfer the chicken mixture to the slow cooker and spread it into an even layer.
4. Cover and cook on Low for 2 to 3 hours, until hot throughout and the flavors have melded.
5. Just before serving, sprinkle the crushed potato chips over the top. Serve warm directly from the slow cooker or spoon onto plates.
Variations & Tips
Make-ahead tip: Mix the chicken, soup, mayonnaise, and celery the night before and refrigerate. Transfer to the slow cooker the next day and heat as directed, then add the crushed chips right before serving so they stay crisp.
Texture tip: If you like a stronger crunch, reserve part of the crushed potato chips and add a second handful over each serving at the table. That contrast between the creamy filling and crisp topping is what makes this style of dish so appealing.
Oven variation: If you prefer, spread the mixture in a greased baking dish, top with the crushed potato chips, and bake at 350°F until hot and bubbly, about 25 to 30 minutes. This gives the topping a more toasted finish.
Ingredient tip: Rotisserie chicken brings the easiest flavor here, but any cooked shredded chicken will work. If your chicken is well seasoned, taste the mixture before heating to decide whether it needs a small pinch of salt or pepper, though many cooks find the five ingredients do all the work on their own.
