Some of the best weeknight dinners are the ones you can throw together with pantry staples and just a few refrigerator basics, especially on those long workdays when standing over the stove sounds impossible. This kind of comforting, layered casserole-style meal has that classic Midwest “make it stretch and make it cozy” feel, using boxed potatoes and ground beef to turn simple ingredients into something hearty and family-friendly with hardly any fuss.
Serve this with a simple green salad, steamed green beans, buttered peas, or roasted broccoli to balance the richness. If you want to make it feel extra homey, add warm dinner rolls or toasted garlic bread on the side, and for drinks, iced tea or a light red wine both work nicely with the cheesy beef-and-potato flavors.
Slow Cooker 5-Ingredient Hamburger Au Gratin Bake
Servings: 6
Ingredients
2 boxes (4.7 to 5.1 ounces each) boxed au gratin potatoes, including sauce packets
1 pound raw ground beef
2 cups milk
4 tablespoons butter, melted
2 cups shredded cheddar cheese, divided
Directions
1. Lightly coat the inside of a 5- to 6-quart slow cooker with nonstick spray or a little butter if desired for easier cleanup. Spread the raw ground beef evenly across the bottom of the slow cooker insert.
2. Open both boxes of au gratin potatoes and remove the sauce packets. Sprinkle the dry potato slices evenly over the raw beef.
3. In a medium bowl, whisk together both sauce packets, the milk, and melted butter until mostly smooth. Pour the mixture evenly over the potatoes. Sprinkle 1 cup of the shredded cheddar over the top.
4. Cover and cook on LOW for 5 to 6 hours, or until the potatoes are tender and the beef is cooked through. Avoid opening the lid during the first several hours so the potatoes cook evenly.
5. Sprinkle the remaining 1 cup cheddar cheese over the top, cover again, and cook for 10 to 15 minutes more, until the cheese is melted. Let the bake rest for about 10 minutes before scooping and serving.
Variations & Tips
For extra seasoning: If your family likes a little more flavor, add black pepper, garlic powder, or a spoonful of dried minced onion to the milk mixture. Since boxed potatoes can vary in saltiness, it is best to taste after cooking before adding extra salt.
For easier serving: Break up the ground beef a bit as you spread it in the slow cooker so it cooks into scoopable crumbles instead of one large layer. That makes the casserole easier to portion and gives you a better mix of beef and potatoes in every serving.
For make-ahead prep: Measure out the milk, melt the butter, and shred the cheese ahead of time so dinner comes together in just a couple of minutes before work. I like setting the boxes and sauce packets on the counter the night before when I know the next day will be packed.
For a crispier top: If your slow cooker insert is oven-safe, you can transfer it to the oven under the broiler for a minute or two after the final cheese addition. Keep a close eye on it so the cheese bubbles and browns lightly without burning.
For checking doneness: Slow cookers can run a little differently, so test a potato slice from the center before serving. If it still feels firm, give it another 20 to 30 minutes on LOW until fully tender.
