When you need a low-fuss dish that can feed a crowd and still feel comforting, this is the kind of recipe that earns a permanent place in the family rotation. It leans on a handful of simple store-bought ingredients, lets the slow cooker do most of the work, and turns out rich, creamy, and hearty enough for game day, potlucks, or those extra-busy evenings when you want something filling without juggling a long ingredient list.
This pairs nicely with simple sides that balance the richness, like a crisp green salad, carrot and celery sticks, garlic bread, or a tray of cut fruit for a tailgate spread. If you're serving a hungry crowd, I like setting out extra shredded cheddar, more bacon bits, and a little chopped parsley so everyone can top their bowl the way they like.
Slow Cooker 5-Ingredient Chicken Bacon Ranch Pasta
Servings: 6
Ingredients
2 pounds raw boneless skinless chicken breasts
12 ounces dry rotini
1 packet dry ranch seasoning mix, about 1 ounce
8 ounces cream cheese, cut into chunks
1 cup bacon bits
Directions
1. Place the chicken breasts in the slow cooker and sprinkle the ranch seasoning evenly over the top. Add the cream cheese chunks over the chicken, cover, and cook on low for 4 to 5 hours or until the chicken is fully cooked and tender.
2. Shred the cooked chicken right in the slow cooker, then stir everything together until the cream cheese melts into a smooth, creamy sauce.
3. Meanwhile, cook the rotini in salted water according to the package directions until just tender. Drain well.
4. Add the drained rotini and bacon bits to the slow cooker. Stir until the pasta is evenly coated and everything is well combined. Let it sit on warm for 5 to 10 minutes to thicken slightly before serving.
5. Spoon onto plates or into bowls and serve warm.
Variations & Tips
For extra cheesiness: Stir in 1 to 2 cups of shredded cheddar at the end if you want an even richer, more tailgate-style finish. It melts right into the hot pasta and makes the whole dish especially cozy.
For picky eaters: Save a little bacon to sprinkle over individual portions instead of mixing it all in. That way, kids or bacon-lovers can choose how much they want on top.
To loosen the sauce: If the mixture seems too thick after adding the pasta, stir in a splash of hot water from the pasta pot, a little at a time, until it reaches the texture you like.
Make-ahead tip: Cook and shred the chicken mixture ahead of time, then refrigerate it. When you're ready to serve, warm it in the slow cooker, cook the pasta fresh, and stir everything together with the bacon bits just before mealtime.
Protein shortcut: If your chicken breasts are especially large, cut them in half before slow cooking so they cook more evenly and shred a little faster at the end.
