When I need a party appetizer that looks put-together without adding one more cooking task to my day, I always come back to simple assembly recipes like this one. It has that perfect holiday-hosting magic: a crisp base, a creamy spread, and a polished finish that makes it seem more involved than it really is, which is exactly the kind of shortcut I love keeping in my back pocket during a busy week.
These are great on an appetizer board with olives, cheese cubes, and a few salami slices if you're keeping things low carb, or next to crackers and sparkling water with lemon for a light party spread. They also pair nicely with chilled white wine, a holiday brunch buffet, or as a fresh contrast alongside richer baked dips and warm finger foods.
Low Carb 3-Ingredient Shrimp Cucumber Bites
Servings: 16 bites
Ingredients
1 English cucumber, sliced into 16 rounds
5 oz garlic herb cream cheese
16 cooked shrimp, peeled
Directions
1. Slice the English cucumber into about 16 even rounds and arrange them in a single layer on a platter or tray.
2. Spread a small spoonful of garlic herb cream cheese onto each cucumber round, smoothing it gently to cover the top.
3. Top each round with one cooked shrimp, pressing lightly so it stays in place.
4. Chill until ready to serve, or serve right away for the freshest texture.
Variations & Tips
Make-ahead tip: Slice the cucumber and have the shrimp ready ahead of time, but assemble these as close to serving as you can so the cucumber stays crisp. If you're prepping after work before guests arrive, I like to line everything up assembly-line style and finish the tray in just a few minutes.
Easy piping option: If the cream cheese is a little firm, let it sit at room temperature for 10 to 15 minutes. You can also spoon it into a zip-top bag, snip the corner, and pipe it onto the cucumber rounds for a cleaner party look.
Extra flavor boost: A tiny sprinkle of black pepper, paprika, or fresh dill on top can make these feel a little more festive without changing the easy 3-ingredient spirit of the recipe.
Mini appetizer board version: If you want to stretch the recipe for a gathering, arrange the bites on a platter with extra cucumber slices and a few more shrimp around them so the tray looks full and party-ready.
