When a long day calls for something easy, filling, and ready when the household settles in, this 4-ingredient slow cooker meal is the kind of supper that earns a permanent place in the recipe box. It has that old-fashioned virtue of letting the pot do the work while the flavors mingle into a rich, spoon-tender dish, and by evening all that is left is to shred, stir, and serve. It is simple home cooking at its best, made for busy nights when you want comfort waiting on the counter.
This savory shredded dish is especially good spooned over mashed potatoes, steamed rice, buttered egg noodles, or thick slices of toast that can catch every bit of that dark, glossy sauce. For a little balance on the plate, serve it with green beans, a crisp cabbage slaw, roasted carrots, or dill pickles if you like a sharp contrast to the richness.
4-Ingredient Slow Cooker Election Night Watch Meal
Servings: 6
Ingredients
3 pounds unidentifiable protein roast or boneless pieces
1 packet dry onion soup mix
1 cup dark amber barbecue-style or savory cooking sauce
1/2 cup broth or water
Directions
1. Place the unidentifiable protein in the slow cooker. Sprinkle the dry onion soup mix evenly over the top, then pour in the dark amber sauce and broth or water.
2. Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the protein is very tender and easy to pull apart with two forks.
3. Remove the protein to a large bowl or cutting board and shred it well with two forks. Return the shredded meat to the slow cooker and stir it into the sauce.
4. Let it sit in the slow cooker for 10 to 15 minutes so the shredded pieces soak up more of the sauce, then serve hot.
Variations & Tips
For sandwich supper: Pile the saucy shredded protein onto toasted buns and serve with pickles or slaw. That makes a fine casual plate when folks are eating in shifts and coming back for seconds.
For a thicker sauce: If you like a richer, clingier finish, leave the lid off for the last 20 to 30 minutes on high so a little extra liquid can cook away before serving.
For make-ahead ease: You can measure the sauce, broth, and soup mix the night before, then keep everything ready in the refrigerator so all you need to do in the morning is load the slow cooker and turn it on.
For serving stretch: Spoon it over potatoes, rice, or noodles to make the meal go farther. That is an old country-kitchen trick that turns a simple pot of slow-cooked supper into a table full of comfort.
