These oven baked 5-ingredient vanilla cookie fudge bars are the kind of easy dessert I keep in my back pocket for busy weeks, bake sales, and those nights when I need something sweet without dragging out a mixer. The whole vanilla sandwich cookies form an instant base and soak up a rich, fudgy topping as everything bakes together in one sheet pan. It has that old-school pantry dessert feel, with simple ingredients turning into something that tastes much more special than the effort involved.
Serve these bars slightly warm or fully cooled with a cold glass of milk, hot coffee, or a scoop of vanilla ice cream if you want to lean all the way into dessert mode. They also travel well for potlucks and lunchbox treats, and a small square on a dessert tray pairs nicely with fresh strawberries or sliced bananas to balance the sweetness.
Oven Baked 5-Ingredient Vanilla Cookie Fudge Bars
Servings: 16 bars
Ingredients
24 whole vanilla sandwich cookies
1 can (14 ounces) sweetened condensed milk
2 cups semisweet chocolate chips
4 tablespoons unsalted butter
1 teaspoon vanilla extract
Directions
1. Preheat the oven to 350°F and lightly grease or line a small metal sheet pan or 8x8-inch metal baking pan with parchment for easier lifting and slicing.
2. Arrange the whole unbroken vanilla sandwich cookies in a single even layer across the bottom of the pan, fitting them snugly so they cover as much surface as possible.
3. In a microwave-safe bowl or small saucepan, combine the sweetened condensed milk, chocolate chips, butter, and vanilla extract. Heat gently, stirring often, until the mixture is smooth, thick, and glossy.
4. Pour the warm fudge mixture over the cookies and spread it gently into an even layer, making sure the cookies are fully covered all the way to the corners.
5. Bake for 12 to 15 minutes, just until the top is set and shiny and the edges look slightly puffed. Do not overbake.
6. Let the bars cool completely in the pan, then chill for 1 to 2 hours for the cleanest slices. Cut into 16 squares and serve.
Variations & Tips
White Chocolate Version: Swap the semisweet chocolate chips for white chocolate chips for a sweeter, creamier bar with more of a vanilla-forward flavor. Keep the baking time about the same, but watch closely since white chocolate can brown faster.
Peanut Butter Swirl: Warm a few spoonfuls of peanut butter and swirl it over the fudge layer before baking. It adds a salty contrast that works really well when you want these bars to taste a little more like a candy-shop treat.
Make-Ahead Tip: These bars are even easier to slice after a few hours in the fridge, so they are great for prepping the night before a party or family get-together. I like to store them in a covered container with parchment between layers.
Pan and Cutting Tip: A metal pan gives the most even bake here, and parchment makes lifting the whole slab out much less messy. For neat squares, use a sharp knife and wipe it clean between cuts.
Easy Flavor Add-In: If you want to dress them up without making the recipe more complicated, add a pinch of salt or a handful of chopped nuts to the melted fudge mixture. It is a simple way to make the bars feel a little different from week to week.
