This 4-Ingredient Cheeseburger Soup is the kind of practical, comforting stovetop dinner that earns a permanent place in a busy cook’s rotation. It takes a handful of supermarket staples—ground beef, broth, frozen hash browns, and a block of Velveeta—and turns them into a thick, creamy soup with the familiar flavor of a cheeseburger in a bowl. Recipes like this grew out of home kitchens that prized convenience and hearty results, and it’s easy to see why they remain popular.
Serve this rich soup with saltine crackers, buttered toast, or a crusty loaf of bread for dipping. If you want to round out the meal, a simple green salad, dill pickles, or a side of steamed green beans helps balance the richness, and for a true diner-style pairing, a few extra pickle slices on the side fit the cheeseburger theme nicely.
4-Ingredient Cheeseburger Soup
Servings: 6
Ingredients
1 pound ground beef
4 cups beef broth
1 bag (about 20 ounces) frozen diced hash browns
16 ounces Velveeta, cut into cubes
Directions
1. In a large pot or Dutch oven, combine the ground beef, beef broth, and frozen diced hash browns over medium-high heat. Break up the beef with a spoon as the mixture heats.
2. Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cook for 12 to 15 minutes, stirring occasionally, until the beef is fully cooked and the potatoes are tender.
3. Add the Velveeta cubes and stir gently until completely melted and smooth, creating a creamy cheese soup base.
4. Taste and serve hot once the soup is smooth and creamy. Ladle into bowls and enjoy right away.
Variations & Tips
Make it thinner or thicker: If you prefer a looser soup, add an extra splash of broth while the cheese melts. For a thicker bowl, let the soup simmer a few extra minutes uncovered so the potatoes release more starch into the broth.
Add classic burger garnishes: A spoonful of diced pickles, a sprinkle of black pepper, or a little chopped onion on top can give the soup more of that cheeseburger character without changing the easy base recipe.
Brown the beef first if you want deeper flavor: Although this shortcut version cooks everything together, you can brown and drain the beef before adding the broth and hash browns for a slightly richer, more savory result.
Cut the cheese into smaller cubes: Velveeta melts quickly, but smaller cubes will melt more evenly and help prevent any clumping if the soup is simmering too hard.
