When the air turns sharp and the leaves start skittering across the yard, I always find myself reaching for the kind of simple sweets that feel right at home on a Midwestern kitchen table. These oven baked autumn mix blondie bars are the sort of dessert you make when you want something cozy without fussing half the afternoon away. With just a handful of pantry staples and those classic Brach's autumn mix candies tucked right into the batter, you get a buttery blondie bar with pockets of soft candy corn sweetness that feels playful, nostalgic, and just right for fall gatherings, bake sales, and weekend suppers.
Serve these bars with hot coffee, cold milk, or a cup of apple cider if you really want to lean into the season. They make a sweet ending after a bowl of chili, beef stew, or roast chicken, and they fit in nicely on a holiday dessert tray beside pumpkin cookies and pecan pie. If you're taking them to a potluck, cut them into small squares, because folks will almost always come back for a second piece.
Oven Baked 5-Ingredient Autumn Mix Blondie Bars
Servings: 16 bars
Ingredients
1 box yellow cake mix
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
2 cups whole unwrapped Brach's autumn mix candies
Directions
1. Preheat your oven to 350 degrees Fahrenheit and lightly grease a clear glass 9x13 baking dish.
2. In a large mixing bowl, stir together the yellow cake mix, melted butter, eggs, and vanilla until a thick blondie batter forms.
3. Spread the batter evenly into the prepared baking dish, then scatter the whole unwrapped autumn mix candies all across the top, pressing them in lightly so they settle into the batter.
4. Bake for 22 to 28 minutes, until the edges are lightly golden and the center is set. Do not overbake, or the bars can turn dry.
5. Let the bars cool completely in the pan before cutting into squares and serving.
Variations & Tips
For easier cutting: Let the bars cool fully before slicing, and wipe the knife clean between cuts. That little bit of patience gives you neater squares and keeps the candy from dragging across the tops.
To keep the texture soft: Glass baking dishes can hold heat a bit longer, so start checking the bars at the low end of the baking time. You want the center set but not hard, since they will continue to firm up as they cool.
Add a salty touch: If you like that sweet-and-salty combination, sprinkle a light pinch of flaky salt over the top right after baking. It balances the sweetness nicely and gives the bars a more grown-up flavor.
Try a chocolate twist: A small handful of chocolate chips folded into the batter can make these taste a bit like a candy-studded cookie bar. Keep the autumn mix as the star and go easy so the bars still bake up properly.
For a holiday tray: Cut these into smaller bite-size pieces if you're serving them with other desserts. Their bright little candy tops look cheerful on a fall platter and make an especially nice addition to Halloween and Thanksgiving spreads.
