Some recipes earn a permanent spot in the family meal rotation because they are easy, filling, and impossible for people to stop sneaking bites of straight from the pot. This cozy crockpot dinner is one of those back-pocket meals that comes together with very little prep, uses just a handful of store-bought ingredients, and turns into the kind of rich, comforting dish that disappears fast at potlucks, game nights, and chilly-weather suppers.
This hearty dish is especially good with a simple green salad, roasted green beans, or steamed broccoli to balance the creamy richness. If you are serving a crowd, set out warm dinner rolls or buttered toast for scooping up the extra sauce, and for a casual gathering, it fits right in next to applesauce, coleslaw, or a big platter of sliced fresh vegetables.
Slow Cooker 5-Ingredient Cheesy Kielbasa and Potatoes
Servings: 6
Ingredients
2 lb baby red potatoes, quartered
14 oz smoked kielbasa, sliced into coins
1 can (10.5 oz) condensed cream of chicken soup
1 packet dry ranch seasoning
2 cups shredded cheddar cheese
Directions
1. Lightly coat the inside of a slow cooker crock with nonstick spray if desired for easier cleanup. Add the quartered red potatoes and sliced kielbasa.
2. Spoon the condensed cream of chicken soup over the potatoes and kielbasa, then sprinkle the ranch seasoning evenly across the top.
3. Stir well so the potatoes and kielbasa are evenly coated. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the potatoes are fork-tender.
4. Sprinkle the shredded cheddar cheese over the top, cover again, and cook for 10 to 15 minutes more, just until the cheese is melted.
5. Gently stir if you want the cheese mixed throughout, or leave it melted on top for serving. Spoon into bowls or onto plates and serve hot.
Variations & Tips
For extra browning: If you have a few extra minutes, brown the kielbasa slices in a skillet before adding them to the slow cooker. That little step gives the sausage deeper flavor and a nice color in the finished dish.
For picky eaters: Stir the melted cheese all the way into the sauce so everything looks extra creamy and uniform. Kids who do not love visible seasoning or browned cheese on top often go for it more easily this way.
Swap the soup: Cream of mushroom or cream of celery both work nicely if that is what you have in the pantry. Each one changes the flavor a little, but the recipe still stays simple and cozy.
Make it a fuller meal: Add a couple handfuls of broccoli florets during the last 30 minutes of cooking, or serve the dish over steamed vegetables. It is an easy way to stretch the meal and bring a little color to the table.
Cheese tip: Sharp cheddar gives the biggest flavor, but a mild cheddar is great for families who like a softer, creamier cheese taste. For the smoothest melt, add the cheese at the very end and avoid over-stirring once it is fully melted.
