Some of the handiest recipes come from making do with a few refrigerator staples, and this one has that same thrifty little magic so many Midwestern home cooks have always appreciated. With just a handful of ingredients and an oven, you can turn a creamy whipped mixture into tender, airy rounds that feel a bit special for brunches, holiday snack boards, or those times when you want something bread-like without fussing with flour and yeast.
These light rounds are especially nice alongside scrambled eggs, bacon, sausage patties, or a bowl of warm soup. For a holiday table, set them out with sliced ham, turkey, or smoked salmon and a dish of herbed cream cheese, or use them as a base for tiny open-faced sandwiches with crisp cucumber or tomato on top.
Low Carb 3-Ingredient Cloud Bread
Servings: 6
Ingredients
3 large eggs, separated
3 tbsp cream cheese, softened
1/4 tsp cream of tartar
Directions
1. Preheat the oven to 300°F and line a baking tray or flat pan with foil. If needed, lightly grease the foil so the rounds lift away easily after baking.
2. Place the egg whites and cream of tartar in a clean bowl. Beat until stiff peaks form. The whites should look glossy and hold their shape when the beater is lifted.
3. In a second bowl, beat the egg yolks with the softened cream cheese until smooth and fully combined.
4. Gently fold the yolk mixture into the whipped egg whites, taking care not to deflate the batter too much. Stop mixing as soon as the color looks mostly even and the mixture stays fluffy.
5. Spoon the mixture into a piping bag or plastic bag with the corner snipped, then pipe 3- to 4-inch rounds onto the prepared tray, leaving a little space between them.
6. Bake for 25 to 30 minutes, or until the rounds are set and lightly golden on top. Let them cool for a few minutes before gently lifting them from the foil and serving.
Variations & Tips
For better volume: Make sure the egg whites are beaten in a spotless bowl with no grease or yolk mixed in. Even a little bit of fat can keep the whites from whipping up properly.
For easier shaping: If you do not have a piping bag, simply spoon the mixture onto the tray and smooth it lightly into rounds with the back of the spoon. They will still bake up tender and light.
For a savory touch: Add a tiny pinch of salt, a sprinkle of garlic powder, or a little dried Italian seasoning to the yolk mixture. It gives the rounds a bit more character if you plan to serve them with meats or cheese.
For sweeter serving ideas: These can also be served with a little whipped cream cheese or a few fresh berries for brunch. They are mild in flavor, so they welcome both sweet and savory toppings.
For storage: Keep leftovers in an airtight container in the refrigerator for up to 3 days. A short warm-up in a low oven helps bring back some of that soft, fresh-made texture.
