Some recipes stick around because they are easy, reliable, and somehow disappear faster than anything else on the table. This no-bake party appetizer has that exact magic, with just a few basic ingredients stirred together into something that feels a little nostalgic and a little irresistible. It is the kind of make-ahead dish that works especially well during busy holiday weeks, game days, or any time you need something low carb that still feels festive.
Serve it with celery sticks, cucumber rounds, bell pepper strips, or your favorite low carb crackers for a simple appetizer spread. It also fits right in on a holiday snack board with olives, sliced salami, pickles, and a few fresh grapes for guests who want a mix of savory bites.
Low Carb 3-Ingredient Pecan Cheddar Cheese Ball
Servings: 8
Ingredients
8 oz cream cheese, softened
2 cups shredded sharp cheddar
1 cup chopped toasted pecans
Directions
1. Place the softened cream cheese and shredded sharp cheddar in a medium mixing bowl. Mix with a sturdy spoon or clean hands until fully combined and evenly distributed.
2. Shape the mixture into a ball with your hands. If it feels too soft, chill it for 15 to 20 minutes first to make shaping easier.
3. Spread the chopped toasted pecans on a plate, then roll the cheese ball in the nuts until coated all over, pressing gently so they stick well.
4. Transfer to a serving platter, cover, and chill for at least 30 minutes before serving so it firms up and slices neatly.
Variations & Tips
Add a little seasoning: If you want to stretch past the classic three-ingredient version, a pinch of garlic powder, onion powder, or black pepper mixes in easily and adds extra savory flavor.
Make-ahead tip: This is a great prep-ahead appetizer for a busy week. Shape and coat it up to 2 days in advance, then keep it wrapped in the fridge until you are ready to serve.
Texture tip: For the best finish, use block cheddar that you shred yourself if possible. Pre-shredded cheese works in a pinch, but freshly shredded cheddar blends more smoothly with the cream cheese.
Nut-coating tip: Let the toasted pecans cool completely before coating the outside. Warm nuts can soften the surface too much and make the cheese ball harder to handle.
Serving tip: Let it sit at room temperature for 10 to 15 minutes before setting it out. It will be easier to spread and the cheddar flavor comes through more clearly.
