These oven baked fig newton harvest bars are the kind of easy dessert that feels almost too simple to work, yet they come out warm, sweet, and comforting with hardly any fuss. Using whole fig newton cookies as the base keeps prep quick, while a few cozy pantry ingredients turn them into a soft bar-style treat that tastes right at home during fall gatherings, school nights, or a casual family dessert.
Serve these bars slightly warm with coffee, tea, or cold milk for a simple treat, or dress them up with a scoop of vanilla ice cream for company. They also fit nicely on a dessert tray with fresh apple slices, pears, or a handful of toasted nuts if you want to lean into that harvest flavor.
Oven Baked 5-Ingredient Fig Newton Harvest Bars
Servings: 12 bars
Ingredients
16 whole fig newton cookies
1/2 cup unsalted butter, melted
1/2 cup brown sugar, packed
1 cup chopped pecans
1 teaspoon ground cinnamon
Directions
1. Preheat the oven to 350°F. Lightly grease an oven-safe metal sheet pan or line it with parchment for easier cleanup.
2. Arrange the whole fig newton cookies in a single snug layer in the sheet pan, keeping them unbroken and close together.
3. In a small bowl, stir together the melted butter, brown sugar, chopped pecans, and cinnamon until everything is evenly coated and crumbly.
4. Spoon the pecan mixture evenly over the fig newton cookies, covering them as uniformly as you can.
5. Bake for 15 to 18 minutes, until the topping is bubbling a little and the cookies are warmed through. Let the pan cool for 10 to 15 minutes so the bars can set slightly.
6. Cut into bars or squares and serve warm, or let them cool completely for a firmer texture.
Variations & Tips
Nut-Free Version: Skip the pecans and use old-fashioned oats in the same amount for a chewy topping with a little harvest feel that works well for households avoiding nuts.
Extra Cozy Spice: Add a pinch of nutmeg or pumpkin pie spice along with the cinnamon if your family enjoys a deeper fall flavor.
For Picky Eaters: Chop the pecans very finely so they blend into the topping more, making the bars feel softer and less chunky for kids who notice texture right away.
Make It Dessert-Party Ready: After baking and cooling, drizzle the bars lightly with a simple powdered sugar glaze if you want them to look a little more special on a dessert table.
Best Pan Tip: Keep the fig newton cookies in a tight single layer so the topping settles across them evenly and the finished bars are easier to cut and lift out.
