These southern 3-ingredient cheesy lunch lady bites are the kind of easy comfort food that disappears fast at potlucks, holiday tables, and weeknight dinners alike. They have that cozy old-school cafeteria charm people remember fondly, with a buttery biscuit base and plenty of melted cheese baked into tender, golden bites. When you need something inexpensive, filling, and crowd-pleasing without a long shopping list, this is exactly the sort of recipe worth keeping close.
Serve these warm alongside soup, chili, baked ham, roast turkey, or a big green salad for a simple meal. They also fit right in on a holiday appetizer table with ranch dressing, hot sauce, or a little honey butter on the side, and they are especially good with classic southern-style sides like green beans, mac and cheese, or collard greens.

1/2 cup melted butter

2. In a large bowl, toss the quartered biscuit pieces with the shredded cheddar cheese until the dough is evenly coated.
3. Spread the biscuit and cheese mixture evenly into the prepared baking dish, then drizzle the melted butter all over the top.

Variations & Tips
For extra flavor: Stir in a pinch of garlic powder, onion powder, or a little black pepper if you do not mind going beyond the three basic ingredients. It gives the bites a little more savory depth without changing the easy feel of the recipe.
For picky eaters: Try using a mild cheddar or a Colby Jack blend for a softer cheese flavor. If your family likes things extra cheesy, sprinkle a little more cheese on top during the last 5 minutes of baking.
For easier serving: Let the casserole rest a few minutes before cutting or scooping so the cheese can settle slightly. That little pause makes neater portions and helps the bites hold together better on a holiday buffet or snack table.
For a crispier finish: Bake the dish on the middle rack and do not overcrowd the dough pieces. If you want deeper browning on top, give it another 2 to 3 minutes in the oven while watching closely.
For make-ahead planning: You can cut the biscuits and mix them with the cheese a few hours ahead, then add the butter right before baking. This makes holiday cooking or busy school-night prep much easier.
