There are some party dishes that come and go, and then there are the ones that settle in like old friends and never leave the table. This slow cooker 4-ingredient creamy corn dip is one of those easy little treasures, the kind of recipe a neighbor passes across the fence or brings to a church supper and suddenly everybody wants it. Using canned sweet corn keeps it simple and dependable, and once that creamy cheese melts together in the slow cooker, you have a warm, scoopable dip that tastes like pure comfort with hardly any fuss at all.
This dip is just right with sturdy tortilla chips, but it also does well with buttery crackers, toasted baguette slices, or crisp celery sticks if you want a little freshness on the platter. For a holiday spread, I like to set it out beside a relish tray, little smoky sausages, and a pan of baked meatballs, with cold tea, punch, or a light beer nearby. If you're serving a crowd, it fits in especially well with other cozy appetizers and stays friendly on the buffet as long as the slow cooker is set to warm.
Slow Cooker 4-Ingredient Creamy Corn Dip
Servings: 8
Ingredients
2 cans (15.25 ounces each) sweet corn, drained
8 ounces cream cheese, cubed
1 cup shredded white cheddar or Monterey Jack cheese
1/2 cup sliced green onions, plus a little extra for garnish
Directions
1. Lightly grease the inside of a small slow cooker. Add the drained sweet corn, cubed cream cheese, shredded white cheese, and sliced green onions.
2. Cover and cook on low for 1 1/2 to 2 hours, stirring once or twice, until the cheeses are fully melted and the dip is hot and creamy.
3. Give the dip a final stir, taste, and add a few extra green onions on top if you like. Switch the slow cooker to warm for serving.
4. Serve hot with tortilla chips, crackers, or cut vegetables for dipping.
Variations & Tips
Make it a little richer: If you want an even silkier dip for a special gathering, stir in an extra handful of shredded cheese during the last 15 minutes of cooking. It makes the dip stretch a little further too.
Add a touch of heat: A spoonful of diced pickled jalapenos or a pinch of red pepper flakes can wake this up nicely without changing the easy nature of the recipe. Start small, then taste before adding more.
Keep it from getting watery: Be sure to drain the canned corn well before adding it to the slow cooker. Too much liquid can thin the dip more than you want.
Best way to hold for a party: Once melted, keep the dip on the warm setting and give it a stir every so often. If it thickens up after sitting, a spoonful or two of milk can loosen it right back up.
Easy make-ahead tip: You can combine all the ingredients in the slow cooker insert ahead of time, cover, and refrigerate for several hours. When you're ready, set it in the cooker and add a little extra time since it will be starting cold.
