Ingredients

1 whole bone-in pork shoulder, about 5 to 7 pounds

1 large onion, sliced
1 packet dry onion soup mix, about 1 ounce
1 cup chicken broth
1/2 cup barbecue sauce

Directions

1. Scatter the sliced onion across the bottom of the slow cooker insert to make a bed for the pork.

2. Set the whole bone-in pork shoulder on top of the onions. Sprinkle the dry onion soup mix evenly over the pork, then pour in the chicken broth and barbecue sauce around and over the meat.

3. Cover and cook on low for 8 to 10 hours, or until the pork is very tender and easily pulls away from the bone.

4. Carefully transfer the pork to a large platter or rimmed baking sheet. Remove and discard the bone and any large pieces of fat, then shred or break the meat into big tender chunks. Spoon some of the cooking juices and onions over the top before serving.

Variations & Tips

For milder family flavor: Use a sweet, mild barbecue sauce and serve the pork in bigger chunks instead of fully shredding it. This keeps the texture soft and simple for picky eaters.
