This slow cooker brisket is the kind of dinner I lean on when I want something that feels special without hovering over the stove all day. Using a whole brisket flat keeps things simple, and with just four ingredients, the slow cooker does the heavy lifting while the beef turns rich, juicy, and fork-tender. It has that classic comfort-food feel that makes it perfect for Sunday dinner, meal prep, or a cozy cold-weather meal when everyone wants something hearty.

Serve this brisket sliced or shredded with mashed potatoes, buttered egg noodles, or roasted carrots so you can soak up all the savory juices. It’s also great with soft rolls for sandwiches, a simple green salad to lighten the plate, or creamy coleslaw if you want a little crunch alongside the tender beef.

Ingredients

1 whole beef brisket flat, about 4 to 5 pounds

1 large onion, sliced
1 packet dry onion soup mix, about 1 ounce
2 cups beef broth

Directions

1. Place the sliced onion in the bottom of a white slow cooker insert, then set the whole brisket flat on top.

2. Sprinkle the dry onion soup mix evenly over the brisket, then pour the beef broth around and partly over the meat.

3. Cover and cook on low for 8 to 10 hours, or until the brisket is very tender and pulls apart easily with a fork.

4. Transfer the brisket to a cutting board, let it rest for 10 to 15 minutes, then slice against the grain or shred and spoon some of the cooking juices over the top before serving.

Variations & Tips

Add garlic: If you want a little more depth, add 4 to 6 whole garlic cloves around the brisket before cooking. They soften into the broth and make the finished juices taste richer.

For cleaner slices: Letting the brisket rest before cutting really helps it stay juicy. Use a sharp knife and slice against the grain for tender pieces; if it’s extra soft, shredding is often the easier option.

Make it ahead: This brisket reheats beautifully, which makes it great for busy weekdays. Store the sliced or shredded meat in some of the cooking liquid so it stays moist in the fridge.

Turn it into sandwiches: Pile the brisket onto toasted buns with a little of the reduced cooking liquid or your favorite barbecue sauce. This is one of my favorite ways to stretch leftovers into a second dinner that feels completely different.

If your brisket is larger: A whole brisket flat can vary in size, so make sure the lid still closes securely on your slow cooker. If it’s a tight fit, trim just enough to help it settle into the insert without folding too much.
