Some of my favorite desserts are the ones that feel almost too easy to work, and this one definitely fits that category. This oven baked coconut custard pie comes together with just four basic ingredients, mixed right in the pie plate, which makes it perfect for busy weeknights, last-minute guests, or those times when you want something homemade without covering the whole kitchen in dishes. As it bakes, the sweetened condensed milk, eggs, butter, and coconut turn into a rich, chewy-edged custard pie with a beautifully golden top and a soft center.
This pie is lovely all on its own, but I really like serving it slightly cooled with hot coffee or tea for an easy dessert that feels a little special. If you want to dress it up, a spoonful of lightly whipped cream and a few fresh berries balance the sweetness nicely, and for a bigger dessert spread it pairs well with fruit salad or a scoop of vanilla ice cream.
4-Ingredient Oven Baked Coconut Custard Pie
Servings: 8
Ingredients
1 can (14 oz) sweetened condensed milk
Directions
1. Preheat the oven to 325°F. Set an empty glass pie plate on your work surface so you can mix everything directly in it.
2. Pour the sweetened condensed milk into the pie plate, then add the shredded coconut, eggs, and melted butter.
3. Stir well right in the pie plate until the mixture is evenly combined and there are no dry pockets of coconut left. Spread it out evenly all the way to the edges.
4. Bake for 30 to 35 minutes, until the top is golden and the center barely jiggles when the pie plate is gently moved.
5. Let the pie cool completely for about 1 hour before slicing. It will continue to firm up as it cools, making cleaner slices and a better custard texture.
Variations & Tips
Add vanilla: If you do not mind going beyond the four-ingredient version, stir in 1 teaspoon vanilla extract for a warmer bakery-style flavor that pairs really nicely with the coconut.
Use unsweetened coconut: For a less sweet pie, swap in unsweetened shredded coconut. The texture stays delicious, but the overall flavor is a little more balanced if you prefer desserts that are not quite as rich.
Do not overbake: The center should still have the slightest jiggle when it comes out of the oven. If it bakes until fully firm in the oven, it can turn rubbery after cooling.
Cool before slicing: This is the hardest part, but it matters. Giving the pie a full hour to cool helps the custard set properly, so the slices hold together much better.
Store extras chilled: Cover any leftovers and refrigerate them. I actually think this pie is especially good cold the next day, which makes it a great make-ahead dessert for busy weeks.
